Colombia Monteblanco Watermelon is a highly expressive specialty coffee produced by Rodrigo Sánchez Valencia at Finca Monteblanco in Huila, using Caturra and Catuai grown at around 1,860 meters above sea level. The coffee undergoes a distinctive Watermelon (Nectar Citrullus) Co-Fermented Washed process, in which Rodrigo creates a mother culture from microorganisms naturally present on the coffee cherries, then feeds it with panela and concentrated watermelon and melon juice. The culture ferments for approximately 190 hours, after which freshly harvested and pulped coffee cherries undergo a second controlled fermentation with the watermelon culture for around 150 hours before being washed and dried for 2–3 days in the sun and a further 15–18 days under shade
